
Spicy Cabbage Soup
- 2 tbsp vegetable oil
- 1 brown onion, chopped
- 2 garlic cloves, crushed
- 1 large cabbage, chopped
- 1 tin of chopped tomatoes (400 grams)
- 1 carrot, peeled and chopped
- 1/2 green pepper, deseeded and diced – I used a red pepper because they’re sweeter
- 1 litre of chicken stock – I used vegetable stock
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp chilli powder (hot)
- 1/2 tsp salt
- 1/4 black pepper
- Put the oil into a large pan and place it over a medium heat.
- Add the onion and garlic and cook for about 5 minutes, or until softened.
- Add everything else to the pan and bring to the boil, then reduce the heat to low and simmer for 1 1/2 – 2 hours.
- Serve in bowls – I recommend with crusty bread.
