Spicy Cabbage Soup

  • 2 tbsp vegetable oil
  • 1 brown onion, chopped
  • 2 garlic cloves, crushed
  • 1 large cabbage, chopped
  • 1 tin of chopped tomatoes (400 grams)
  • 1 carrot, peeled and chopped
  • 1/2 green pepper, deseeded and diced – I used a red pepper because they’re sweeter
  • 1 litre of chicken stock – I used vegetable stock
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp chilli powder (hot)
  • 1/2 tsp salt
  • 1/4 black pepper

  1. Put the oil into a large pan and place it over a medium heat.
  2. Add the onion and garlic and cook for about 5 minutes, or until softened.
  3. Add everything else to the pan and bring to the boil, then reduce the heat to low and simmer for 1 1/2 – 2 hours.
  4. Serve in bowls – I recommend with crusty bread.
